Hara Bhara Subz Pulao – A Perfect Wholesome Treat

Combination of vegetables with brown rice add colours and delightful flavours to this super delicious Pulao. Not only the taste, but this dish is also healthy for foodies. Brown rice is a rich source of various nutrients like protein, Vitamin A, carbohydrates, and Iron. Combined with fibre-rich and vitamins and minerals rich veggies with tasty green paste, makes a perfectly wholesome treat.

After trying this oil-free nutrient rich Hara Bhara Subz Pulao then you will not crave for any fatty dish anymore. Do try this simple and easy making recipe for your friends and family which takes maximum 30 minutes to cook including preparation time.

Ingredients required:-

  • For Paste (Makes ½ Cup approx.)
  • Chopped Dhania (Coriander) – 1 ½ Cups
  • Roughly Chopped Green Chillies – 3 – 4
  • Adarak (Ginger) – 1”
  • Garlic – 8 – 10 cloves
  • Water – 2 -3 Tbsp

Other Ingredients:-

  • Rice (Long Grained rice) – 1 ¼ Cup
  • Ghee – 4 Tbsp
  • Dalchini (Cinnamon) – 2”
  • Laung (Cloves) – 2
  • Elaichi (Cardamoms) – 2
  • Bay leaf – 2
  • Chopped Onions – ⅓ Cup
  • Cauliflower Florets – ¾ Cup
  • Potato Cubes – ¾ Cup
  • Green Peas – ½ Cup
  • Salt – To taste

For Garnish:-

  • Finely Chopped Coriander leaves – 2 Tbsp

How to Prepare:-

  1. Soak rice for around 15 minutes in enough water. Then drain and keep it aside.
    2. Take a pressure cooker and heat the ghee. Once heat then adds cloves, cinnamon, and cardamom. Saute them for 1 minute on a medium flame.
    3. Time to add all the veggies. Add Cauliflower, potatoes, peas, and onion. Mix them well and cook for few seconds.
    4. Then add rice and salt and saute for a further one minute on medium flame.
    5. Next, add 3 cups of hot water in the mixture and pressure cook them on a high flame until 2 whistles.
    6. Let the steam escape thoroughly before opening the lid.
    7. Garnish with Fresh coriander leaves and serve hot.
    8. Allow the steam to escape using automatic/ natural release method, (refer handy tip ) before opening the lid. Serve hot garnished with coriander.

Tips:-

Let the rice cool naturally through escaping the steam automatically. This helps grains to cook properly. Quick release the pressure caused in splitting apart.
